Pressure-cooker octopus stew - Stifado

Pressure-cooker octopus stew - Stifado

Method

  • Place the pressure cooker over high heat and add 2 tablespoons olive oil.
  • Add the onions, sugar, and sauté for 4-5 minutes until they caramelize.
  • Clean the octopus and cut it into pieces.
  • Add the octopus into the cooker and mix.
  • Cut the garlic into pieces and add them to the cooker. Add the tomato paste and sauté.
  • Deglaze the cooker with the wine and as soon as it evaporates, add the tomato. Place the allspice, bay leaves, chili flakes, and thyme into a cheesecloth, tie it with kitchen twine, and place it into the pressure cooker.
  • Close the pressure cooker with the lid, turn the safety valve to the proper pressure indicator, lower the heat to medium, and boil for 30 minutes.
  • As soon as it is ready, turn the safety valve so that the air is released and the pressure cooker is depressurized. Alternatively, turn off the heat and allow 5-10 minutes for the pressure cooker to depressurize on its own.
  • Serve with thyme, rosemary, olive oil, pepper, bread slices, feta cheese, and oregano.
