Salmon gravadlax with a Finocchio Salad


  • Thinly slice the salmon with a sharp knife and spread them out on a serving platter, one next to the other.
  • Remove the nicest outer leaf from the finochio and set aside. Use a mandolin or a sharp knife to thinly slice the remaining finochio.
  • Transfer to a bowl and add the lime zest, lemon zest, grated ginger, olive oil, chives, salt and pepper. Toss to make the salad.
  • Thinly slice the green apple and spread them over the salmon.
  • Fill the finochio leaf with the salad and place over salmon.
  • Season with salt and freshly ground pepper. Serve.
