Banoffee cake

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.

For the dulce de leche

  • Add the 2 cans of sweetened condensed milk into a pot with water and let them boil. Once the water comes to a boil, lower the heat to medium and simmer for 3 hours, making sure that the cans are constantly covered with the water. You should add a little boiling water every hour.
  • Carefully remove the cans from the pot and let them cool well before opening them.
  • If you have store-bought dulce de leche, simply skip this step.

For the crust

  • Beat the cookies in a food processor until they are completely crushed and powdered.
  • Place a frying pan over medium heat, add the butter and let it melt.
  • Transfer the crushed cookies to the pan along with the lemon zest, the ginger, the cinnamon, and mix with a serving spoon until the ingredients are homogenized.
  • Add the mixture into a round 26 cm springform pan lined with parchment paper. 
  • Spread the cookie crust on the bottom of the pan and press it with a glass to get evenly thick over the whole surface. Make sure to crimp the edges of the cookie crust. 

For the filling

  • Add the dulce de leche into a bowl along with the salt.
  • Whisk the dulce de leche very well until you get a smooth caramel. 
  • Add the heavy cream into a mixer’s bowl and beat it with the whisk attachment at high speed, until you get a firm whipped cream. 
  • Remove the bowl from the mixer.
  • Add 1/3 of the whipped cream into the bowl with the caramel and mix well with a silicone spatula, until the ingredients are homogenized. 
  • Add the rest of the whipped cream and fold it gently.
  • Pour the filling over the cookie crust and use a straight spatula to spread it evenly over the whole surface.
  • Cover the pan with plastic wrap and put it in the freezer for 10-12 hours. 

To assemble

  • Use your hands to heat the springform pan in order to easily take the cake out of it.
  • Spread the whipped cream over the ice-cold filling. 
  • Decorate with the pieces of the dried or fresh bananas, add the crushed cookies, and sprinkle with the finely chopped chocolate.
  • Serve.


Cut the fresh banana into rounds and add it into a bowl with a little lemon juice. Mix carefully with a spoon. This way, the banana will not turn brown.
