Tiramisu cake

  • Vegetarian Diet

    Diet based on cereals, pulses, nuts, seeds, vegetables, fruits and other animal foods such as honey and eggs. Excludes meat, fish, mollusks.


For the syrup

  • In a pot, add the coffee, sugar, cognac, and transfer over medium heat.
  • Let it come to a boil and as soon as the sugar melts, remove from the heat and set aside to cool.

For the puff pastry

  • Preheat the oven to 190ο C (374 ο F) set to fan.
  • In a bowl, add the cocoa powder, sugar, and mix with a spoon.
  • Cut the puff pastry sheet into 4 strips from the longer side. Then, cut each strip into 10 smaller pieces.
  • Dip each puff pastry into the bowl with the cocoa powder and sugar, and place them in two baking pans lined with parchment paper.
  • Pierce the whole surface of the puff pastry with a fork, so that they don’t rise during baking.
  • Bake for 20-25 minutes.
  • Allow 20-30 minutes for them to cool.

For the cream

  • In a bowl, add the sugar, cognac, vanilla extract, yolks, and transfer it over a pot with simmering water, by creating a bain-marie.
  • Mix with a hand whisk for 5-7 minutes, until the mixture is fluffy and white.
  • Remove from the heat and set aside to cool.
  • In a mixer’s bowl, add the mascarpone and beat with the whisk attachment for 1-2 minutes.
  • Add the cold heavy cream, cocoa powder, and beat until the cream thickens. Add the egg mixture and beat for a few seconds, until the ingredients are combined.

To assemble

  • Spread plastic wrap onto a 20 cm baking pan. Make sure to cover its whole surface.
  • Finely chop the chocolate couverture and set aside.
  • Dip the puff pastry pieces into the cold syrup and place them all around the baking pan. Follow the same process until you cover the pan’s bottom.
  • Spread half of the cream, half of the chocolate couverture, and cover with another layer of the puff pastry.
  • Spread the remaining cream, chocolate couverture, and cover with another layer of the puff pastry.
  • Cover with plastic wrap and press lightly with your hands, so to cover any possible gaps.
  • Place into the refrigerator for 6-8 hours to cool well.
  • Take it out of the pan, dust with cocoa powder, and serve.
