American mac 'n' cheese

Method

  • Preheat the oven to 200ο C (390ο F) set to fan.
  • In a pot with boiling water add salt, the macaroni, and boil for 2 minutes less than indicated on the packet’s instructions.
  • At the same time, add the butter in another pot and let it melt.
  • Add the flour, the mustard, the chili flakes, the thyme, and whisk until the whole flour is absorbed by the butter.
  • Add the milk in batches and whisk well. Once the mixture thickens and comes to a boil, remove from the heat.
  • Add the cheese in batches and whisk well until it is melted and homogenized. 
  • Drain the macaroni and transfer it into the pot with the bechamel sauce. Mix well and transfer to a 20x30 cm ovenproof baking dish.
  • In a bowl mix the grated sandwich bread, the cheese, the garlic, and the thyme.
  • Sprinkle the mixture over the baking dish, drizzle with the olive oil, and bake for 8-10 minutes.
  • Let it cool and serve.
