What are dumplings? They are small balls of dough which are made of flour, water, and cooking fat. It is said that they were “invented” by Zhang Zhongjing, about 1.800 years ago, when he wanted to warm up his compatriots since he saw that their ears had started to freeze from the cold…In that way, he created small pies in the shape of an ear, and he filled them with lamb meat, chili, and some medicinal herbs. After boiling them, he gave them to the poor. The particular ingredients helped in warming up the body of the people, contributing to better blood flow. Also known as Jiaozi, they symbolize the warmth of home.
- Chop the cabbage into very thin slices.
- Mix it with the salt and leave it in a colander for 15 minutes. Immediately after, press it with your hands so that it extracts its juices and then add it to a bowl.
- Add the remaining ingredients, except for the wonton wrappers. Mix them well so that they are homogenized and prepare your dumplings.
- Get a bowl with water and line a baking pan with parchment paper.
- Take a wonton wrapper and add 1 tablespoon of the filling in the center.
- With your fingers, lightly wet the edges all around the wrapper. Seal them easily like pouches or fold them in half and add them to the baking pan.
- Place them into a non-stick frying pan that has a lid or into a wide non-stick pot.
- Add 1 tablespoon sunflower oil and put half of the dumplings in. As they do not rise, you can put plenty of them in, provided that they do not touch each other.
- Sauté them for 1-2 minutes until their base gets a nice golden color.
- Add 3-4 tablespoons of water to the frying pan, lower the heat to minimum, and seal with the lid.
- Simmer for 3-5 minutes.
- Repeat the same process with the rest of the dumplings and serve.
If you have a steam cooker or a bamboo steamer, you can cook them as follows: Line the steam cooker with parchment paper and place the dumplings on it. Steam them until the wrappers are tender, almost translucent, and their interior is cooked, for about 6-8 minutes.
