#FoodStories: So, does alcohol evaporate when cooked?

Alcohol does not evaporate completely when cooked. On the contrary, a certain percentage of
it evaporates, which -in fact- depends on the cooking time of the food. More specifically, the
percentage of alcohol that remains after cooking varies as follows:


• After 15 minutes of cooking, 40% alcohol remains in our food.
• After 30 minutes of cooking, 35% alcohol remains in our food.
• After 1 hour of cooking, 25% alcohol remains in our food.
• After 2 hours of cooking, 10% alcohol remains in our food.
• After 2½ hours of cooking, 5% alcohol remains in our food.
