What to eat during summer holidays

As much as we love cooking, it is true that we do not want to spend our summer in the kitchen. We need to spend time at the beach, avoid the heat, and beat the…boredom (we all know that in summer we are not as active as in the winter) and so, we avoid cooking as much as possible. But what if we want to avoid takeout and eating out all the time? Then, we have to think smart and come up with recipes that do not require much cooking, have relatively few and simple ingredients, and -above all- are delicious and can be enjoyed by all members of the family! Because, cooking a meal for each one individually is really not possible…especially when we have countless alternatives! So…where do we start?

5 things we need from our summer recipes

In short… What is it that we ask for from a recipe in order to add it to our summer holiday menu?

  • We want it to be easy - that is, not to require a lot of cooking.
  • It should be simple - that is, with ingredients that can be found anywhere.
  • It should not be heavy - in summer we need light dishes that should give energy to our body.
  • It should be nutritious – as we avoid eating out, we have to prepare something nutrient-rich, with less saturated fat and sugar.
  • We want it to "withstand" the difficult weather conditions - so, if there is a little food leftover, we should be able to take it with us to the beach, in a portable refrigerator.

#1 EGG

Boiled egg, fried egg, or an omelet. Okay… What can I say…? There are countless ways to cook eggs and enjoy them at any time of the day - from breakfast to dinner! In salads, sandwiches, or even plain, they can be a first-class meal and -of course- follow us everywhere.

It is not by chance that it has won our appreciation lately. Avocado is a unique ingredient that can give our body valuable nutrients, and be the basis for delicious recipes that do not even require us to heat our stovetop. So, what do we do with it? For starters, cut it into slices and add it to sandwiches and salads. Next thought? Make a spread with it and serve it with your favorite breadsticks.

Preferably whole-wheat, which will be filled with various ingredients of our liking and turn into the most delicious and filling sandwich of all time - well, of summer. What can it contain? Everything that comes to mind - from cheese, egg and tuna, to leftovers from a roasted chicken or meat, and -of course- plenty of vegetables.

And since we are talking about vegetables, in addition to using them as a side dish, we can also use them as a main dish! This season, salads have their place of honor and we have to “honor” them properly! Our alternatives? Truly countless… Among them, the exotic, the superfood, the summer, and our favorite “horiatiki” salad! As for the fruit? Make a salad, prepare nutritious smoothies with them, and make super refreshing granitas in no time!

A pasta dish is delicious even with some cheese and a little pepper! Of course, if you are in the mood to make a sauce with fresh seasonal tomatoes, then we are talking about a first-class Napolitana - who could say no to that? The next step? Use your vegetables to prepare light and delicious salads within 10 minutes.
